Abstract

This work describes an electrochemical technique that is suitable for the rapid and sensitive screening of the sweeteners acesulfame-K, cyclamate andsaccharin based on surface-stabilized bilayer lipid membranes (s-BLMs) composed from egg phosphatidylcholine (PC). The interactions of the sweetenerswith s-BLMs which produced a reproducible electrochemical ion current signal increase appeared within a Few s after exposure of the membranes to the sweetener. The current signal increases were related to the concentration of the sweetener in bulk solution in the micromolar range. The present lipidfilm based sensor provided fast response (i.e., on the order of a few s) to alterations of acesulfame-K, cyclamate and saccharin concentration (1 to 15, 10 to 160 and 0.4 to 7 mu M) in electrolyte solution. The electrochemical transduction of the interactions of these artificial sweeteners with s-BLMs was applied in the determination of these compounds in granulated sugarsubstitute products by using the present minisensor.
