Abstract

The histological analysis of the rhizome cells of West Indian ginger (Zingiber officinale Roscoe), has revealed some information about the cell's design. Comparisons have shown that the oleoresin (pungent principles-gingerols and shogaols) were not observable in cell sections of the fresh ginger rhizomes. However, the number of the oleoresin organelles increased in the order of solar dried and solar dried/steam distilled ginger rhizomes, the latter having a high oleoresin extraction yield with acetone of 8.0 g per 100 g ginger rhizome (dry wt).
