Abstract

Pineapple juice colloids were isolated from home made juice, concentrate and commercially available juices and analyzed for their composition. Beside proteins (5.5-28.4 g/100 g) they are mainly consisting of polysaccharides (22.9-61.7 g/100 g) with the dominating monomers arabinose (11.3-27.2%), xylose (3.0-19.2%), mannose (7.5-26.4%), galactose (10.6-31.9%), glucose (2.4-16.0%), galacturonic (7.5-42.4%) and glucuronic acid (0.7-22.5%). The distribution of the particular sugars differs strongly, there is no typical pattern of sugar constituents. Selected samples separated by anion-exchange-chromatography were analyzed fortheir structure with the per-O-methylation method. Here beta-1,4-linked (gluco)-mannans and type II-arabinogalactans were found. The strongly differing colloid compositions are limiting the detection of possible juice adulteration with thickening agents.
